[PC] Downforce / grip/ drift menu

Really enjoying the game so far but one thing I find mildly infuriating is that there's a game menu for key bindings-- but it doesn't actually list all of the button that have functions in the game.  Only the ones they let you change.  There's still a whole mess of other buttons the game uses that aren't listed here.

I'm trying to figure out how to pull up the mini-menu that I've seen in reviews where you can adjust downforce, change tap to drift from gas to break, and a few other things (tire grip may be one?).  I swear I've pressed every button on the keyboard and cannot get this thing to pop up-- and of course it's not listed in the key binding menu.

How do you get to that menu on PC?
