80C is not an overly high temperature and certainly shouldn't be shutting off anything.

Check that your display is connected to your GPU and not your motherboard video output
Temporarily disable your antivirus/antimalware software
Install all available Windows Updates

Hello I have the same issue CPU start to over heat temp reaches 100°c after half an hour the game freeze and the desktop turns off.
Intel i710700k
Gigabyte RTX 2070 8GB
16GB RAM.
Assus prime z490-a
Running the game on the HDD.
