Lamborghini Diablo SV = 6 Stars and 12/40 BP's
BMW M4 F82 (Razor) = 6 Stars and 5/25 BP's
Jaguar F-Type = 6 Stars and 8/25 BP's
Lamborghini Huracan (Greyed out as not unlocked but is there!) = 3 Stars and 4/35 BP's
Ferrari LaFerrari = 4 Stars and 21/35 BP's

Nissan Skyline GT-R BNR34 = 18 blueprints needed
Nissan 180SX Type X = 14 blueprints + 1* needed
Dodge Charger R/T = 9 blueprints +2* needed
Lamborghini Diablo SV = 25 blueprints needed
and these are the car series I was therefore not able to finish:
Viva l'italia - 922 RP needed for the Huracan
King Kaiju - 788 RP needed for the GT-R 34
Moon Cars - 857 RP needed for Jaguar F
Speedmonster - 820 RP needed for Lambo Diablo
all other car series can be finished without full star cars (as far as I can see).
