@Homiens, as an interim attempt to fix, have you tried calibrating your system with the PC Fanatec calibration tool (built into the driver updater), and create a small deadzone at the start of each pedal travel? Not sure if you're experiencing the same issue as other re small input errors here (the menu scrolling problems) but might be worth a shot just in case. I've found manual calibration for pedals solved similar problems in other games like Forza also. FWIW I'm playing on an older CSW2.5 Fanatec system on Xbox SX and it's working perfectly bar A/B/X/Y not being detected (another bug mentioned in another post...).

This only happens to me while playing Grid Legends on Playstation. It doesn't happen while playing the game on xbox or any other game on playstation.
