You'll probably find that a lot of players are taking hybrids and long irons off the tee for many holes where they can still use an 8/9/PW to make their approach, this drastically reduces the probability of missing the fairway. The other factor is that rough and sand just aren't that difficult to get out of, in fact as long as there are no trees in the way ill just play a normal shot out of them 95% of the time as it behaves the same way.
14 under on arcade for 9 holes doesn't seem that hard to achieve for the top players id say, bear in mind with spin applied after the shot, coupled with the maths they use to work out where to hit, holing out 3/4 times in 9 holes is doable. its personally why i dont play it and stick to tour mode.
I think 20 under for 18 holes on Tour will be a good score for top 10/20 on the standings, and this is about the level you had to be on previous EA golf games to be up there.
