Not able to earn coins or diamonds on PVZ2
Not sure why, but I am still able to watch videos on PVZ2 but won't earn any coins or diamonds afterwards.
Any ideas?

Hmm, this sounds like data corruption. Before you go any further it might be wise to take a screenshot of your player ID or note it down somewhere safe as you might need it to recover your game progress.
Question1, assuming you have a certain amount on coins or gems (diamonds) on you account, what happens if you spend them? Does the amount get reduced? (I ask this so we can understand whether the resource counter is stuck or unable to get updates)
Question2, If you earn coins or gems from quests such as Arena or quests from the travel log, do they add to the amount? If it does then I think there are some rogue ads that failed to give rewards, if so, you might want to report them and make a claim of the missing rewards by contacting EA HELP CENTER from the link at the bottom of this page.
This is actually apart of the latest updated that added the offers tab. You now have to wait 24 hours to get rewards after watching add (which is dumb) but you can now watch over 3 gem ads (I have to wait till 3 am or so to see if it works)
I have seen this over in subreddit, this is something new with 9.7.x release and unless you are lucky enough to have been chosen to be an EA Guinea Pig, you will not experience this until the update is officially released.
Now we know that you are running a beta test PVZ2 so that explains why there were no gems or coins rewards appearing, please wait for 24hours and see if the rewards are added to your account. I do not think I like this new arrangement, but hey, I will wait and see if the changes bring different opportunities....
