I will answer your mint question here as best I can.

New mints are introduced monthly and some weeks the mint is the Plant of the Week for BattleZ as it is this week.

There have been weeks where new players get the opportunity to purchase previously released mints and hopefully there will be another chance very soon in the Spring.  Saving up your mints could be a good idea...I have collected every mint and did not level up the early mints because I did not have enough Gems to maintain a long win streak yet in BattleZ.
