same problem, in city center i found 3 fungininjas, killed them, but it didn't counted, got 2 out 3 and it got reset.
Same problem here, been trying for days now but no luck so far.
Any tips on how to do it??

I started fighting in Camp Near-a-lake near the entrance to Weirding Woods, until a dynamic battle was started and while battling there 3 Kernel Corns bunched up so I was able to take them out with the single Rocket Ride.
Before that I'd tried resetting Zombie Prepared (started by Izzy at the start of the map) and followed it up until the 2nd cookie location.
If you play during the mission there's multiple acorns and a sunflower there, so hopefully you can get the 3 vanquishes after clearing out the weeds and sunspot.I did it pretty quick in wailing woods. Started the rose boss by the lake and just used it on the nightcaps and champion hypnoshrooms. They spawn after rose goes into enigma. Hit them as soon as they spawn and are grouped up.
Weirding Woods in the back of the ztech factory has an oak with 2 acorns riding him. Just weaken the oak a bit and it's an easy triple.
