For PS4, the system I play on, each person with a PSN Account is able to play their own game without interfering with that of the other people also playing it on the system. This is because each PSN Account is linked to an individual Origin account on the EA servers, and that is where your game information will be saved.
The game is primarily one player, but PS4 and XBox offer the option of Split Screen for two players on one system but I don't know if that same option is available for PC. The Split Screen comes at the "cost" of being denied any online multiplayer with other players but you still retain access to all the multiplayer game modes with mediocre AI filling in for real people. Any Co-Op games that you play in Split Screen will be limited to just the two of you with no other player or AI assistance.

Sorry... forgot to mention that I am playing on PC... To get into the game, Origin opens up on the desktop showing the games I have installed and playable. When I click on the GW2 icon in the Game Library screen, a window opens up giving me the options of Play, Settings and Favorite. Settings lets me Play, Update or Remove From Favorites, and Favorites simply lets me show that this is a preferred game. When I click Play (either one) the game opens up to a screen showing my existing character ready for action. There is no option to select a character/player, start a new game, etc. There may be something very simple that I am overlooking, but for the life of me I can't seem to find any way to start a new character/player or even to reset the character I am playing...

I don't play on PC myself but if I understand the process correctly if you purchased or redeemed the game on one Origin account that game will be tied directly and solely to that particular account; while you could sign into your account on any computer it would only be available on your Origin account; and two people cannot be signed into the same Origin account at the same time since it will want to logout the older session.
As far as the game operates there is no way to "restart" or otherwise clear out your progress as far as I am aware. This is a game that you really can't "mess up" or make the sort of major error or mistake which would prompt a wholesale restart; in fact it's really not preferable because the goal of unlocking the various character variants, accessories and areas all represent a substantial investment of time and effort which I doubt anyone would want to discard in order to start over.
You should find that you have access to all of the default character on both the Zombie and the Plant teams; you can change your character by entering the Dressing Room which you will find to the right side of the main gate when you are facing it. Changing teams can be done by going to the little 'recruitment' desk which is positioned on the left side of the main gate.
If you have any other general questions I might be able to answer them since the game play is universal across platforms; only the actual control schemes will differ.
