Are you absolutely positive you're doing them right?
You need to play infinity mode for this to work.
Infinity unlocks after you've played through the main story for either plants or zombies and is located in the underground path accessed through Dave's garage (plant location) or in the underground accessed through a hole to the right of the Zombie OPs Machine (zombie location).
Accessing Infinity costs 5 stars each time and can be insanely difficult to play in single player mode, so I highly recommend you do this with a friend, as being two players in this mode makes it MUCH easier.
Only the host has to pay the 5 stars, if I remember it correctly.
You will get a trophy for every 5 waves, when you defeat a gnome king, that spawns in, as shown in this video:

The final RGBY trophy should pop, once you've completed wave 25.
