Super boss waves only appear on wave 10 and you have the highest chance of getting a super boss wave on hard/crazy difficulty settings. It's rare to get a super boss wave in this game though (unlike on the first game where it happened often on hard and crazy difficulties)
If you're trying to complete a daily quest just stuck to those two difficulties. Hard mode isn't that difficult with groups of players (or even a good AI team) and crazy mode while a lot easier than the other game is still do able if you know what you are doing and are playing with a good team

Anyways from what I can tell specific Super Boss Waves only appear on specific maps. I only ran into 2 of them so far, Giga gargantuar at the factory, and Super Bean at Time Park.
