I agree with a lot of these suggestions. One thing I'd like to add is, what about some of the varients for classes left in the dust? For example commando pea,archeologist,and alien flower. I found out that apparently archeologist is meant to be basically a sniper varient for scientist I guess. It would be nice if that was stated more clearly in the game. Commando pea just can't get in the effectivness of having a rapid fire attack. Finally alien flower's spore mist is to weak. Also from my experience from TT the meta for engies has been electrician and AC Perry. It has already been mentioned for tweaking AC Perry so going to electrician. The engie doesn't seem to have that big of a damage drop off over range. So electricians have become known for spamming their shots onto points and dealing like 36-46 damage and not to mention the chain effect. So I think engie might need some more damage fall off over a distance so characters such as the electrician don't sit so far back spamming.
Also something I would like to see in the future is a return mechanic introduced in the first game with the promotional updates. That was citrus cactus and berry shooter. To be honest a three burst cactus was a cool mechanic and I would love to see a return of the mechanic, It doesn't mean that that specific character has to return but just the mechanic. Also berry shooter had the mechanic of a larger splash radius like the plumber. I think this should also come back since this mechanic for a varient would be a newbie friendly peashooter with the larger splash radius.
I think the all star is fine.
