The fact here my friend, is that Freeze decks are pretty unreliable.
Yes, the scenario that you mentioned is the best case scenario possible, but that's not always what happens.
-Snow Drop needs some freeze actions to actually become a threat (like, at least 2 freezes to become a 5 attack plant) but can die pretty easily early on.
-Can be bounced back and loses its buff.
-Can be blocked with small minions
-Because of the nature of the deck, you can draw lots of Snow Drops early on or none at all. (You can also run out of cards and draw something like an Iceberg Lettuce, which by itself is pretty useless)
Also also, freezing zombies don't do much on it's own. Let's say for example, a Chili Pepper vs Fossilhead (that is like, the trend around lately). You have the cool combo (pun intended) of Freeze + Winter Squash, but if you don't have it, freezing a zombie is just saving some time.
Basically you need to re-freeze big minions constantly because freeze plants can't (most of the time) kill them on its own.
