Destroying the popsicles is not what causes the Yeti King to be vulnerable. After that, you need to survive until the "King's Fool" spawns, which is a Champion Imp. Kill it and drink the drink that the imp drops, and whoever drank it will get a field around them. Stay in that field and hunt out and damage the king, as this is the only time he is vulnerable.
