I've just spoken the EA tech support. This was their answer:
"I have checked the details and your system configuration is too high from the recommend system requirements for playing Simcity game."
"So if you try to run game on 2560x1440 resolution. You may face compatibility issue with game."
"You can check the default resolution of game and play Simcity."
Good job EA. After delaying the Mac port for months to provide the best possible port, you haven't optimised the game to run at a 27 inch iMac's native resolution.
I'm hoping there will be a patch to fix this soon but at the moment it seems like there is no fix...
Please pay attention to where you posted. This is not EA. not a Help Center, not Maxis. We play games, we do not do any kind of business in here. No official support at all. It's Gamers interacting with gamers, but .. So far, there has been no indication that any AHQ members from the (Apple) Beta Tests have joined in the regular interchanges between members. We thus remain almost all Windows PC Game Players in here right now. Until more of you Apple people gain experience, there's precious little we can do about details such as what you are discussing in this thread.
You probably need the Official Techs here:

Ah I'm sorry I just followed the links here from the Origin site, I thought that this WAS the help centre.

Thanks, specially appointed forum volunteer. The person posting before me just posted his/her chat dialogue with those official techs and I'm on the phone right now with an EA tech. Using these forums to let others in the same boat know what the issues are, even if no one knows a fix, is a per fectly valid use of AHQ.
I've seen you and others with your special forum box post the same cocky responses, including the one where you berated some poster for not responding to you after 25 hours. "We can't help you, go away, we only use Windows computers". If all you do is play games, then go back to that instead of sitting on your high horse.

Ok, I did some digging and there seems to be a solution here:

For me, I right clicked Simcity in the 'my games' section of Origin, then clicked 'game properties' and added the line -r:2650x1440 and clicked apply.When I loaded the game first time after this it defaulted back to 1600x900.
I then set the resolution back to 2560x1440 in game which resulted in the black bars. However when I restarted the gem this time the resolution was at 2560x1440 and working fine! No black bars. Works in game too, not jus tthe menu. Seems like this is a fix.
Hope this helps anyone else with this issue.

Look, please don't be cocky towards us Mac users, we are just as important as Windows users. You may not agree with our choice of computer over some silly Windows.V.Mac "battle", but we are the 50% of gamers that make EA, Valve, Origin, and any other game publisher.

Still no solution for changing the resolution??
I bought Simcity Complete Edition on the App Store, and the highest resolution I can use is 1600 x 900.
In Origin we can change the resolution by right clicking the game, but I didn't buy it on Origin. So how can we do that on a Mac?
With games like Rollercoaster 3 we could just edit the options.txt. Can't we do it like that with Simcity?
