I had the same issue (ps4) and unfortunately for myself, the only way I could fix it was going into my saved game files and had to erase all the data (only erases single player progress all multi-player and credits are kept) then redo the whole campaign again picking up the collectables, again

Is there another way or fix, because I really do not feel like doing this.
- to my knowledge, there isn't, unless it gets patched soon
