DICE failed to address that properly in the patch notes, but they did it elsewhere. Here it is: Now the button associated with turning sabers on/off is the 'Interact Button', the one you use to enter turrets in the map, or to activte the cantina band holo in the cantina, or to interact with objectives in GA. For default it's Square on PS4, X on XBone and G on PC.
