Yeah, this has been an issue since at least December:

I can confirm that this is still an issue in Co-Op mode on PlayStation 4 as of 7/8/2020. Defeated BB-8 and Chewbacca on Takodana MC-85 Star Cruiser in Co-Op Mode but received no credit towards the Snuff out the Light Timed Challenge.
- I can confirm that this is still an issue in Co-Op mode on PlayStation 4 as of 8/13/2020. Defeated Count Dooku (twice), Darth Maul, Bossk, and General Grievous on Geonosis in Co-Op Mode but received no credit towards the Snuff out the Light Timed Challenge.
