Same for me too. Although mines at 2/5. I completed Unknown Regions defence earlier today and it went to 3/5 but in menus still as 2/5. Since then did the other 2 I needed, Fondor and Ryloth, but still 2/5.
I finally finished both The Defender and The Aggressor in one playlist. When I went back to claim the rewards, they reset back to 3/5 and 4/5 respectively. The map rotation makes this way too hard to replicate. It can take hours to get the right map, right position and a win.
It just happened again for The Defender (Kamino defense). I stayed all the way into the next match, quit, then checked my progress and it reset back to 3/5.
Kamino defense for me as well. It says I can claim the reward after the match, and then it reverts to 4/5 when I attempt to do so. On PS4.

Side note about "The Aggressor" challenge: it let me "claim reward" when it showed 4/5 after I finished the 5th one.I finally got this to work - unsure how though. I played Ryloth again, won as the defender, post round screen said challenge done. I stayed on for a couple of games as I was close to 100 kills as a hero ship, got that finished within a few games, and post round it said multiplayer milestone was at 24/26. Exited to main menu and it was there as completed! I wonder if the other challenge completion ensured that one stayed as completed.
Still a glitch that it cant be done on a proper basis, but that may be a temporary fix. Try completing a different starfighter challenge within the same lobby afterwards.
