I have made a couple discoveries that have led to a big improvement:
1) turn off ‘cockpit throttle feedback’ under general settings!
2) the GUI shaking is associated with ASW. This can be disabled via the ‘oculus debug tool’.
3) also using this tool, I was able to turn on a performance hud that shows frame rate. This allowed me to tune in game settings to an acceptable level
4) in steam vr, I set a game specific profile that assures the game is running at the correct resolution for my headset
5) in the latest Nvidia driver I set ‘low latency mode’ to ultra.
now I am able to play in vr without all the ghosting and jiggling as before. Turning of asw and throttle feedback were the two biggest offenders

It’s worrying that the issues weren’t showing at launch date but then started to appear a few days later though.

Exactly, there were no issues in VR when the game came out.
Then there was a secret update without any description via Steam, and since then I have this shaking issue everywhere.
I just opened a new topic but now I see my problem is exactly described with this one. The above suggestion somehow helped for me as well, but I still do not understand why it only occurs several day after the game was released.

Thanks man turning on low latency mode fixed it for me
