I had some time to tinker with the game. I did the following steps and stuttering seemed to have been reduced significantly following the last one:
1. (probably helpful) Used oculus tray tool to raise the priority of Oculus Link processes: https://www.guru3d.com/files-details/oculus-traytool-download.html
2. (probably not-helpful) Cleaned the Origin cache: https://help.ea.com/en-us/help/faq/clear-cache-to-fix-problems-with-your-games/
3. (definitely helpful) starting the game in windowed mode & after toggling VR *turning-off* the computer screen.

Tried that fix, seems more stuttery to me. Plus it caused my menu to dissapear completely.
