I have the same situation.
I7 6950X
2x 1080ti SLI
The GPU's are NOT overheating (50-52C), the CPU is NOT overheating (60C), I am on the latest drivers, I have tried removing OC, using the Debug Mode and bunch of other "homeopathic" solutions but nothing works.
There is also nothing wrong with my GPU's because I can play other games easily without crashing.

I think both of you state you have SLI cards....could it be related to SLI?? Maybe disable SLI and see if it makes any difference??

Thanks for the input but SLI is not the culprit.
BUT.
I have uninstalled the game from Steam and redownloaded it via Origin. And then I locked the game at 60fps.
I have hade two several hour sessions in the last two days without a crash so far. To be honest, I don't know whether locking at 60 helped or moving the game to Origin. At this point I have the mentality "if it works, don't touch it".
Once I finish the game maybe I will try experimenting with it a bit more.
