Difficulty level change at end of game
At the end of the game I meditate outside the room where the final boss fight occurs, but when I die, I respawn back at the boss fight. I am not able to change to a lower difficulty in the settings,...

You can beat the last boss on the difficulty you're on. Odd you can't change it, but I promise it's possible. I managed it on Grand Master.
And sadly, there's a stupid simple strategy that trivializes that fight, even on Grand Master. Reader beware:
Spoiler
1. Slow her,
2. immediately hit her with the spinning LB-RB (L1-R1) force combo
3. repeat 1 and 2 cycle until out of force.
4. Get hit, use stim to refill force, go to 1.
5. When the droid drops, force pull and throw it at her, or anywhere out of the way. Continue 1-4
She's dead in under a minute.
