I was able to fix it by disconnecting my throttle and binding it to my stick. After that I reconnected it and everything works perfectly.

he is right, unplug the throttle then map it, then plug it back in.
This should be the only answer, still needs an actual fix.

I am using a FlashFire Cobra V5/Accelerator HOTAS Combo, as well as CH Pro Pedals. Both the V5 Joystick and the pedals are recognized under joysticks, but not the Accelerator (the throttle) which leaves me completely unable to use it. I cannot find drivers to download anywhere I look.
Had a similar issue at first with my peddles, rebooting my pc solved it.
