Lots of time in Chuck Yeagers Air Combat, Wing Commander, then X-Wing (DOS), Imperial Pursuit and B-Wing expansions.
Rebel Assault 1 and 2 (not sure whether you call that piloting). After that was Tie Fighter CD-ROM. XvT.
Played a bit of Rogue Squadron on a mates N64 (never found a copy for PC).
Battlefront 1/2 (non EA).
Came back to the series with X-Wing Alliance and then both the EA versions of Battlefront.
Other than that there have been more than a few flight sims over the years of non Star Wars. Lots of flying in Battlefield, ARMA, DCS, IL2, Wings of Prey.
I then started trying to chase the old X-Wing feelings, with Elite Dangerous and then more recently with Rebel Galaxy Outlaw.
I'm now back playing X-Wing Alliance again with all the community mods (it's pretty awesome) in preparation for Squadrons.

I too played the arcade game back in the 80s and also had the Commodore 64 port of it that I'd play at home.
- @Vulture_Bones I started loving Starfighter piloting when I played Battlefront 1 and 2!
What will be interesting will be how much of a blast from the past Squadrons will be.

I guess my first experience was the sit down arcade game Star Fire by Exidy. After that, Star Raider on Atari computers, The Wing commander games, The X-wing/Tie Fighter games, Chuck Yeager's Air Combat, The Freespace games, Star Wars Galaxies, Battlestar Galactica Online, Battlestar Galactica: Beyond the Red Line, Diaspora and House of the Dying Sun.
