Many non-story achievements not tracking despite progress in game.

The achievements are tracking, you just can't see them.  I had the same issue, but was able to unlock the achievements still.

Just continue to parry and deflect blaster bolts. You'll get them. Make sure everything is timed perfectly or it doesnt count and without being able to visually see your progress, you'll never know.
