Apparently she's standing in a group of people at the landing pad on Kashyyyk. It looks like you don't get to meet her at all if you progress past a certain point in the Kashyyyk part of the story.

I missed her on my run and haven't found anything else related to her at this point so looks like I'll have to start from the beginning if I want to add this data entry.

No need to start over, I also missed her, but once I finished the game, the entry appeared
I just finished the game and it does appear in the databank. Also any you might’ve missed in the last area of the game appear as well.
