User nayrrod explains that he also had the same problem and here is what he says:
I had the same issue and had an idea about what may have caused it, I just tried it and it worked for me.
Basically at one point I unlocked the achievement "Not so fast (Defeat 25 enemies while they are under the effect of Empowered Slow)", and the game then glitched and exited right before I could save at a meditation point. I thought that since the achievement was already unlocked I could continue unlocking the others without problems, and ended up with 39/40 just like you.
So I went on and defeated a few enemies with Empowered Slow until "A new hope" popped.
So my theory is that there could be a mismatch between the actual stats of your game saves and your achievements. So it could be worth checking if trying to complete some of those count related achievements again does the trick for you.
For me it was the "What Goes Around" achievement that I had to redo.

Interesting - thank you for sharing that. I will, give that a try today or tomorrow and see if it works.
Did this trick work out? To me, I had all achievements before I completed the story. So once I received the achievement for completing the story, I should've gotten this one as well....
And the end part of the story did not glitch for me. ;-)
The one before "complete the story" (trust only in the force) was the achievement Data Collector.
Seems to work for some people. I've re-done the empowered slow and the perfect dodge ones without it popping for me. Plan on trying a few others sooner or later.
Yea I just saw some sort of mismatch in my data I think.
On Stadia Web you can see a few scores when visiting your profile.
I see I got "Can't Touch This", which you get for Precision evading 100 attacks. But when I take a look at the scores on top I see, for some reason, I only have 34 "perfect evades". Not sure Perfect Evade and Precision Evade is the same, but I guess this could be it?
