I have found another website: https://stadiahunters.com. When you log in to the website you can see all the achievements you got (and leaderboards etc).
All achieved achievements are blue, like on Stadia, while "A New Hope" is greyed out, since I didn't earn it. So I started looking through the list and I found 1 achievement more to be greyed out: Feel The Force, which you get for unlocking all Jedi Skills. However, when I play the game I already got all the skills... so Im afraid I need to replay the whole game, just to get this achievement lol. Gonna take some time.
Already asked Stadia and EA for confirmation, but they simply won't help.

Hey I would try the solution given in the comments, may not be easy to remenber when you left the game half way before saving but it's your best bet

I am also the developer behing stadihunters.com and the color of the achievements is not related to you unlocking them or not but users of the extension and me unlocking them.
