If you uninstalled via Origin, you are most likely good to navigate to C:\Program Files x86\Origin Games and delete the entire Jedi Fallen Order directory. On my PC, it occupies 54.8GB and that's where it's located.

As I said, all files are gone, but my ssd still shows the amount of space with the game even though it is uninstalled and yes I checked the Origin games folder.
It is a problem of allocation, I'd wager it has something to do with reg keys but I'm not super comfortable going in there without knowing exactly what I'm looking for.

Did you try an app like spacesniffer? It will show you all the files taking up space, particularly helpful in situations like this.
