I'm having the exact same issue, VR is unplayable via oculus link after about 5-10mis. VR version is so mcuh better than screen version I'm going to stop playing until it's fixed. I hope it not too long!!
I use steam version with oculus quest & link. AMD Ryzen Threadripper 1950X 16core, 32 Gb ram , GTX 1080ti / GeForce RTX 6000, HDD install
No updates on this are EA aware of this issue ? Works much better with Vitural Desktop set on 72hz but still happens but it’s not as bad.

I found a solution for me:
I disabled Ultra Low Latency in the Nvidia Settings, and enabled pre-rendered virtual reality frames = 3.
This got rid of the headtracking/graphical stutter and frametime jumping.
It's buttersmooth now.

Can anyone confirm that this problem is on the origin version too??

Yep - I played the trial on Steam under the EA play. I read that the Origin version uses the oculus API directly so I bought the game there. But the 10min head tracking lag happens there too.
Such a shame. I'm really enjoying it otherwise.
I find you can escape to options menu. Come out of VR and go straight back in fairly quickly but still, It's not good.
Quest using Questlink. I even bought a USB 3 cable in case it was bandwidth or something.
