Game keeps defaulting back to Jedi Grandmaster difficulty

Summarize your bug The game has defaulted my 3 saved games onto Jedi Grandmaster; when I change the difficulty to anything else in the gameplay section of settings, and then go back to playing, it automatically changes the difficulty back to Jedi Grandmaster.
How often does the bug occur? Every time (100%)
Steps: How can we find the bug ourselves? Create a patch?
What happens when the bug occurs? The gameplay changes itself back Jedi Grandmaster difficulty.
What do you expect to see? The ability to actually change the gameplay difficulty and actually have it stay at whatever difficulty I select.

No matter what I do, the game changes the difficulty back to Jedi Grandmaster.  It has done this on all 3 of my saved games.
