Found a FIX!!!
Can't post the name of the fix here but follow the links below it worked for me immediately. All controller inputs on Jedi Survivor are back to normal.

Included the first two links for context. Just go to Link 3 (GitHub). Scroll down to Downloads. Follow directions!!
Hope this helps as it seems EA is in no hurry to fix this. If you, like me were almost 100 hours in when EA's update broke the game and made it unplayable.

For Anyone with this fix not working:
Someone on a Steam Forum found out, that it could work if you:
-add the EA App as a non-Steam Game on Steam
-then enable Steam Controller Input, and start the EA App via Steam,
-and then launch the Game
Thought it might help you. It worked for me at least.
