Well, first off, he never actually uses force choke on anyone. Instead he seems to grip their entire body or at least their torso and slowly apply more and more pressure until you get the disturbing bone cracking sounds you hear from Chief Supervisor Denvik (the imperial officer you mentioned). Lovely stuff. Additionally, if they do give Cal this ability as an attack players can utilize, it will certainly make its way into the final chapter and not Jedi: Survivor.
