In order for the collection to unlock all pieces of the armor set must be equipped. If you deleted any pieces and you emailed support@swtor.com you will need to wait for a reply. It may take 2 - 3 business days for a reply or longer as we are over a holiday weekend and they may be backed up on emails from the holiday and are trying to catch up.
Also if you included your Display Name, Server and Character name along with the specific set that will help speed up the reply. If any information was missing it may take a bit longer as well.

Thanks for the reply.
As it was 2 sets of armour in the bundle I equipped them back to back then deleted them as I needed the inventory space before I could progress through the game, but then when I checked the collections neither armour set was there. I have emailed my character name, server name and email attached to account in my original email.
hopefully hear from them soon.
