First off, the holotable game point will stands - regardless as to who you are talking about. Secondly, your movie example either intentionally left out other (more significant) scenes or is just misinformed. For the sake of spoilers, I won't go into detail, but perhaps you should go back amd re-watch the movie of you think that's all Nest did.
As i said just make Nute Gunray the strongest toon in the game if we follow the "nothing to do with the lore" logic and be done with it!
There is a difference between "nothing to do with lore" and "deviation from lore to make a playable game".
As TVF has already pointed out (several times now) this has always been the case. There have been times in the game's history that the best tank was a generic guard in red. Or that the hardest hitting was not a jedi or sith, but a girl with a stick. There was even a time when arena was owned by Poe Dameron flanked by a Geonosian and aime droids. Not sure why after two and half years, this lack of strictly following "lore" is disturbing you so much.
Relax and enjoy the diversity. At least character arena isn't the same 3 over and over and over again. ;)
