Ever heard of suspension of disbelief?
Yes. And haven't you heard how bad artistic decisions sabotage disbelief?
We don't live in the SW galaxy. Maybe blasters easily blow up rocks. Maybe they don't. We don't know - we've mostly seen blasters used in technologically constructed environments. Even in Mos Eisley, maybe those concrete structures are something other than the concrete we know, so the lack of large holes in buildings doesn't mean that we as viewers know what would happen to natural rock.
But the stormtrooper **do** live in the SW galaxy. They are familiar with blaster tech. They should know whether a blaster can take apart ordinary rock. They stood there firing as if the blaster **could** blow apart the rock, but the blaster had no real effect on it at all.
It's unrealistic for someone in the SW fantasy world to not know if misses & ricochets will or won't blow up a rock. Therefore when the show portrays them as if they have no idea what their own blasters can do, suspension of disbelief is undermined.
