I thought these were Zynga properties?
I've enjoyed playing Hunters as well, and the characters and the game are pretty fun. I will probably miss having it available when it closes in October, though I don't play it regularly anymore and may not open it again before its gone.
As I understand it, the premise of the game being considered canon, is that they are fictional roles in-universe played by in-universe actors and broadcast as "reality" entertainment on the HoloNet, for in-universe audiences.
They aren't real people in Star Wars, so I don't think it makes sense to add them to this game, even if it were possible.
It would be like thinking Hulk Hogan is a real persona, but from the star wars universe point of view.
I believe Lucasfilm / Disney would still outright own anything Star Wars related, they may just consult the designers who created the characters so there'd be nothing stopping anything from Hunters potentially appearing in SWGOH.
Also, source please to where it states that the characters are actors because that's new to me?

In no way am I an expert on this, nor have I read the novel that I just learned is a thing - which means Disney/Lucas does seem to own it.
It's supposedly the WWF of the Star Wars universe. There aren't actual battles on the planets depicted in the game - the scenes are just fake locations in the Grand Arena on Vespaara. The combat can't be real, because the personas are always alive again to fight another day.
I'm not saying it would be impossible to include personas from a reality show in the universe, but in doing so it dilutes the 'realism' of SWGOH.

Disney/Lucas would still outright own it, regardless. The articles you listed mention that it's all Canon and that part of Rieve's lore is that she's a force user who pretends to be a Sith for her persona in the matches, much like Leia pretended to be the Bounty Hunter Boushh when entering Jabba's Palace in RotJ.
Well the fates of the characters is right now up in the air so whether they lived or died is irrelevant until new official sources state their demises. Hunters is much in the same vain as Star Wars: Demolition where the characters exist in the main universe (Legends), but their fates after the matches is open to interpretation, with of course the exception being Boba Fett with the fact that we know he survived the game's events as he was present at the Pit of Carkoon to be swallowed and later escape.
