I love that R2-D2's unique gives different benefits for allies from different eras (republic, rebel, resistance...). That was nicely done and a subtle reminder of how important R2D2 has been throughout the history of this wonderful universe.

Quick question, will this be like EP and Yoda? 1 star for first team, 2 for second....do I have any chance of unlocking without a full 6 star empire team?

I have been told that it is like that. If it is, you'll need 5 x 5* toons to unlock, then 5 x 6* to get the shards for 6* and 7x 7* to get R2's 7th star.
