Ok, so I said I'd track my GW data today if I could, so I found time and did.
Doing so has opened my eyes even more to how much effort is required even to track just a single GW run, so I applaud your effort even more. I wish I had a means to just record the screen so I can watch it back instead of having to mark each attack/dodge down at the same time of playing. This becomes even more problematic when there are things like assists and counters going on (I counted every single attack/counter/bonus attack/aeo) and trying to keep track of what effects are in play at the same time. I had to restart a few matches simply because I'd lost count and couldn't be confident in what I'd marked down.

I don't use an evasion team but was surprised that I didn't dodge a single attack the entire 12 matches (there were a couple in matches I had to retreat on but those retreated matches didn't get counted).
My team was: (all 7* g8 lvl 78 with level 7 abilities except for daka's basic which is omega)
Phasma (L)
Lumi
Daka
Asaaj (except for one match I swapped in my g9 STHan)
RG
I faced 3 dodge led teams in total at nodes 5, 10 and 11. Node 10 was Dooku and the other two were Lumi led.
Against non-dodge teams I landed 260 normal attacks and 10 were dodged, whilst none of my 53 specials were dodged. The enemy landed 88 normal and 41 special attacks - I dodged none.
Against dodge led teams I landed 105 normal attacks and 23 were dodged, again none of my 13 special attacks were dodged. The enemy landed 49 normal and 18 special attacks - again I dodged none.
Of course this data is of very limited use. It is very specific to my playstyle and squad - my tactic is to prevent the enemy attacking using stuns and slows. I don't use a dodge lead, so the comparison can only really be between my squad vs other non-dodge squads. I'd also qualify my squad's total lack of dodges as a huge anomaly and say that because of the conditions under which the data was gathered, relying entirely on my own ability to play and write down results simultaneously, this data is somewhat unreliable.
That said, the observed difference between the enemy dodge rates for dodge led and non-dodge led teams is interesting: 3.7% for non-dodge up to 18% for dodge led... hold on a minute isn't the dodge buff of those leaders 15%? .... ;)
Additionally, assuming that normally I would have dodged at least a few times during a GW run, it would only take 3 dodges against non-dodge teams and 2 dodges against dodge teams to match the 3.7% dodge rate of enemy dodge teams, so the difference between AI and myself was not really remarkable.
