Hey.
When sith assassin is in stealth and she uses her skill 'execute,' she will remove ALL of her buffs (including stealth) and deal extra damage. This is the most likely cause for the Dooku counters.
As far as the aoe and out of stealth, I can only guess there is a dispel attached to the attack (baze, b2, etc.) as I used sass for many months and didn't notice any normal aoe attacks removing stealth.
