Boba Fett isn't bad. I find you just have to concentrate all fire on him at once - preferably first or last.
If you take him out first then when he comes back hopefully none of your characters will be low on health so he won't bet able to get his Rez back so you can kill him again before he does.
If you leave him to last then it's slightly riskier because your characters could be low on health but if you've beaten all the other opponents then he isn't really much of a problem.
Haven't faced Talzin enough yet to formulate a strategy to reliably deal with her but I'm sure others can help!
