Armor
How do you increase a toon's armor level? Mods? Gear? Any help will be much appreciated.

Other stats such as speed go higher with mods or particular gear parts.
Load up Chewbacca's stats (since that's someone everyone has) and look at the descriptions of Strength and Tactics. Strength improves his Armor, Tactics improves his Resistance separately.
Armor and Resistance are specific subsets of the general Defense.
