Some people after my own heart.
I run Jedi only in GW and the Arena (11/12 characters in my first two rows are Jedi). From months of experience (since December), here is what I have found using Jedi (I have all but Kit and Plo):
GW: Even at 40,000 arena power, I can clear the first six nodes before losing health with the following team: IGD (L), Anakin, Aayla, Yoda, QGJ. After that, I need to heal and switch to Barriss (L), Anakin, Aayla, Yoda, QGJ. At node 9, I throw in a suicide squad to take out the big up-front hits, then go back to the Barriss team. Finally, but node 11, I throw another suicide squad and go to Anakin (L), Aayla, Yoda, QGJ, IGD. That team finally dies with one or two toons left to mop up and I send in Barriss (L), Mace, Luminara, Ahsoka, and Eek (for good measure). For me, node 12 is bugged and is the kindergarten squad, so they die fast. I have haven't faced a GW that I couldn't beat in over 6 months.
Arena: You can be top tier in the arena with IGD (L), Anakin, Aayla, Yoda, and QGJ. I get to #1 most days and usually don't drop below 12. Mighty can you be, if that team you get. Oh, and Yoda is fine on defense. Under this squad, he gets so many attacks and counters that he usually has foresight and is hard to actually kill. Plus, he slices and dices through 5's, Aayla, and Dooku with foresight. You really do need him if you want a top tier team.
Oh, and just FYI, as you level and gear up, Ahsoka, Luminara, and even Old Ben really don't compare to the later farms like Anakin and Aayla. After level 80, you won't use them as much.
