@Binary_ix has the core of something important here, but didn't explain it.
You need to bring 3 squads up to the same power level, not one squad higher than all the others.
If you are player level 60 but leave your best squad at level 57 you'll have the credits and training droids necessary to get another squad to level 55 and another to level 52-54.
Because you're not improving your strongest team, the difficulty won't increase while you're working on your 2nd and 3rd best squads.
Once you have 3 good squads, you want to use a different squad in each of the first 3 battles. What this does is it gives you a TM boost for each of those squads, so when you use them later you always go first.
Don't underestimate the power of going first. A character many levels higher can't hurt you if they're stunned before they can move.
Now that you have 3 good squads all with primed TM, then you want to ONLY use a squad that can regenerate protection. Jedi Bastila Shan is great for this b/c she regenerates a huge mass of protection at the beginning of every fight, no matter how low you were at the end of the last battle. Phoenix is good, but not as good as Bastila, because they regenerate a little protection in every battle. Geonosian bugs are good, but only if you can get Geo Brood Alpha and you can't farm his node until around level 80 or 82.
So I suggest you use Jedi Bastila + 4 more Jedi as your main team.
Then use Phoenix with Hera lead, Ezra, Kanan, Captain Rex +1 (Zeb and Chopper are best, since they can help you recover protection.
Captain Rex only needs to be 3*. If you can get him to g7 that's very helpful, but I think at level 57 you have to stop at g6 for a while. That's okay.
Your Third squad can be anything, but I suggest an Empire squad until you can reach the level you need for Geonosian Brood Alpha. Veers or Darth Vader lead will probably work best for you. There are lots of Imperial Troopers that are available and cheap to farm.
REMEMBER:
Stop increasing your best squad RIGHT NOW. Do not increase it any more levels until your 2nd squad is 1-2 levels behind your best squad and your Third best squad is 4-5 levels behind your best squad. ALSO do not increase it in gear at all until your 2nd and 3rd squads have essentially caught up in gear tiers. By not increasing your strongest team, you prevent your GW enemy from getting even stronger than they already are. One team can't win GW -- at least not now, and not for a while. It takes a while of good development on your account before you can overpower GW with a single squad. Trying to increase your best squad so that you can win GW only makes GW harder because the rest of your roster gets left behind and can't help you.
Also, do you have a farming plan? If you don't, I can help you make one. It's hard to figure out where to farm everything in this game and how to make the most efficient use of your resources, but there are people here (including me) who are happy to help out.
Next, are you in a good guild, or a starter guild? You need to get out of the starter guilds right away and into a real guild. If you play every day there should be guilds with an average GP of about 1m to 2m who will let you join just for how many raid tickets you bring in. Your regular activity is valuable to them, and their ability to beat higher level raids that starter guilds can't touch is going to be HUGELY important to your ability to progress through the gear tiers.
Finally, are you registered with SWGOH.gg? You should sign up there so that you can share your account info with the people who are trying to help you. We can provide good general advice just from what we remember about GW, but we can provide even better advice if we can see what toons you have and what star-rarity, toon-level, and gear tier they are.
