How long do I grind GS in Cantina?

You get 1 cantina energy every 12 minutes. It's 5 energy per hour, or 120 cantina energy per 24-hours.
Drop chance on cantina nodes is the same as for hard nodes: 33%. Energy consumption on GS nodes is 8, or 15 attempts for 120 energy.
If you don't buy cantina energy refreshes (which is very wrong), you will get 5 his shard per day in average, or 66 days to get him 7* from zero. Experienced players always buy one cantina energy refresh. It will multiply your amount of shard by 2 and, therefore, will halve time of getting him 7* (to 33 days approximately).

If you are lucky, you need 3 months from scratch to 7* him. if you are me, it takes 3 years.

I started farming my at the beginning of March (7th-10th, I don't remember exact date). Every day I use 100 crystals for cantina energy refresh. When I started him, he was 1*, 1/15 shards to 2*. Now he is 6*, 43/100 to 7*. Will be 7* in less than a week.

He's worth it.

I'd stop at 6* to get JC starred up for GW runs. Then come back and finish him off. Early on he doesn't need the 7th*, but having JC will help you finish GW.

@Hale get Geo 5* and gear VIII/IX(if possible) and he will help you a lot on your dark side missions (in low level PvP he will now be viable, too). He fits in every PVP team composition. As far as i remember he will stay gear X on lvl 80. Maybe he will fall behind at 80+, but this will still take a long long time. I guess you will like him and get him 7* as fast as possible ;)

you get level capped at 4 anyway, so you might as well just do level 1 over and over (I sometimes let my 3 1/2 year old daughter play my level GS level - with my 50 team its and easy win and she has fun "making Chewie growl!"

I answered. Twice. Statistically and from personal perspective. Just need to add that leveling up also gives you additional cantina energy favouring your farming.

P.S. my is 61/100 and I'm gonna refresh cantina energy in 45 minutes.
