You are not thinking outside the box. Grievous will make someone tank for him when he gets below 50%. RG does this already. If you have one more tank like Fives Opress or Chewy even.. that would make him destroy you and you can't retaliate.
Now throw in 3 bots behind 2 tanks, you will have a difficult time taking out those bots before they flatten you, consider that Grievous has some decent stats and a basic attack that cannot be stopped, its unavoidable he can target squishy people and they are good as dead.
You are looking it from glass cannons perspective I am looking at it he is behind a well defensed tower surrounded by guards with a personal healer (if you go with 2 bots, 2 tanks and healer), that would make him pretty formidable.. And he has special abilities himself such as reducing opposing team Crit by 40% if he leads.. that's HUGE. So the enemy teams will not only face defense and tanks but have their offense (not to mention turn meter reduced as well) to basic power with no crit.. that's not something you should overlook.
You talk about GG from an "on paper" perspective. I like how you are trying to think outside the box, but unfortunately, even at 7*.. Greivous is simply not a good in game character. If you throw him in a tank team, he is out of place as he is squishy as hell, and doesn't do much damage to compensate. His auto taunt would work with tanks, but you are losing so much health and damage, there are better people. On a droid team.. He still is way to weak, and his auto taunt becomes a nuisance. His leader ability is currently broken, and is not functioning. His health down is cool, but with his low potency, it just doesn't do anything. Greivous is not an arena, or even GW character. He is a character that is a trophy, And is cool as hell. Getting Greivous for your arena squad is like getting a Ferrari that you wanna daily drive. I have a friend who is a whale, and I spent way to much Time theory crafting, and playing against grievous squads, just hoping he would be decent and worth the ridiculous farm. He is not worth it. You will be trying to daily drive a Ferrari with a Honda engine. Yea it looks pretty sweet, but besides that... Nothing really redeeming
I mostly agree with you, but he's intriguing. I have him at 4* GL8, and he's no where near as useful in my droid team as Poe, Lumi, or Sun Fac. I've played him on my team a few times in arena (I'm usually in the 30-50 range on a December shard), and I've won more than I've lost. I think he gets owned on D, though (wish you could see stats on how often you lose). Swapped him out for Poe... still get targeted, but don't drop as precipitously.
I like him in a team with JE (I'm still farming him), but who do you leave out? Perhaps GG with get buffed one day, but I'm not holding my breath.
Haha good job taking high ranks! He is certainly a very interesting toon, with a seemingly great kit, but he won't help you if you are trying to get top 10 ranks. Yea JE would make GG a little more interesting, at least he'd move! my friend who has grievous maxed is farming JE, so I will let you know. He really and truly needs a buff, he is wayyyy to hard of a farm for him to be below average
