No, they're not immune to stun. As you've seen you can stun them which prevents them from avoiding or assisting attacks, the stun just not stick to them.
Following your logic Sith are immune to all regular debuffs because all of them are removed at the start of the turn but that's quite wrong, they're just dispelled but have an effect as long as the specific characters doesn't start its turn.
