Sorry to say but not knowing doesn't bring more variety to team. More viable options does.
Not knowing 2 toons doesn't bring any balance to arena. More viable options does.
Not knowing 2 toons doesn't make people think about defense. Better AI, some sort of player input on defensive AI actions does.
This would most likely decrease variety, since you won't know the full team people will bring in a more standard team to make sure they can win.
