Which zeta's are very important on a JTR team, and what zeta's are less important? Also, what team should I use? I have R2 available for the resistance, but not C3PO and I also don't want to farm the...

Not important zetas- the rest
You can skip JTR's "Virtuous Protector", C3's "Wait for Me!", Hero Poe's only zeta and even R2's "Number Crunch" unless you plan on taking him to higher relics (before going for JML).
Holdo is debatable too before unlocking GL Rey.
Not once, anywhere, in any mode, have I seen the Vets viable. They’re cannon fodder.
Have you seen ahnaldT101 video about beskar mando with veteran han solo get 4/4 in phase 4 in LSgeoTB. I think that's pretty viable (I agree that that's not with JTR, but they're viable)
And I also have seen things with them in a resistance team, I just can't remember which team and which opponent
